Makes 2 toasties
4 slices of thick white bread
4 tablespoons butter
Mango chutney
Grated good quality white cheddar cheese
Sea salt
Thyme leaves
Side salad-
Mixed greens
Thinly sliced shallot
Champagne or balsamic vinaigrette
Melt 2 tablespoons of butter in a small saucepan on medium heat.
Spread mango chutney on one slice of bread, and place it in the middle of the pan. Then, scatter grated white cheddar evenly on top. Sprinkle it with salt and thyme, and top with the second slice of bread. Lower heat to medium/low and toast for 3-4 minutes per side - until both sides are golden brown and the cheese has melted.
Let the toastie cool, and then slice the toastie in half diagonally. Repeat the process for the second toastie.
Serve with a side salad of mixed greens, shallot, and champagne or balsamic vinaigrette.
