Makes 2 toasts


2 slices sourdough bread

2 ripe avocados 

Pinch of garlic powder

Sea salt

2 tablespoons white onion, diced 

2 eggs

1 tablespoon white vinegar

Olive oil, to drizzle 

Sea salt

Fresh basil 

Chives, diced

Lemon wedges 


Bring a small pot of water to a boil. 

Meanwhile, scoop the avocado into a medium bowl. Then add garlic powder, sea salt to taste, and onion. Lightly mash together with a fork. 

Toast the bread, and then spread the mashed avocado on top. 

Place white vinegar in with the now boiling water, and reduce temperature to create a rolling boil. Crack eggs into the water, and cook for 3 ½ minutes, until the whites are just set. Take the eggs out with a slotted spoon, and place on top of each avocado toast. Drizzle with olive oil, sprinkle some more sea salt, and garnish with basil and chives. Serve with lemon wedges on the side.
